I'm really struggling in terms of where to start on studying the Bible. If I don't have some sort of structure, I have no idea what to do.

Here’s a couple of quick thoughts:

Journal as you read. You’ll remember things better and you’ll begin to see that you’re actually making progress. 

Try a topical study. Look up passages on a certain topic. What does the Bible say about love, or faithfulness or scripture itself? And dig deeper into the context of each of those passages. 

Try a book study. Pick a whole book to pick apart one piece at a time. Write down certain sections in your own words and try to figure out exactly what’s the intention behind the words being communicated.

I recommend to new believers they invest their first six months (reading daily) from the first 4 gospels, if possible, one chapter each day.  Then start over again. Get to know JESUS!  Find a translation you can understand, like NEW LIVING TRANSLATION Bible.  I also refer after each chapter to this handy commentary by respected scholar Warren W. Wiersbe.  In your journal, write down questions or concerns you can discuss with a mentor or pastor.  #notthatyouasked :-)
